What it is
Chablis from a single lieu-dit on the left bank, farmed by the third generation of the same family. No oak at all — it is fermented and rested in steel so the chalk underneath comes through.
Drink it too cold and you lose half of it. Twenty minutes out of the fridge is about right.

Anything from the fishmonger. Particularly crab.
