Chenin blanc from clay over tuffeau, picked late enough to get the texture without the sugar. Wild ferment, one year in barrel, no fining.

The kind of white that keeps changing across an evening, which is either the point or an inconvenience depending on the company.

Roast chicken. Or a cheese board, honestly.
